Halal

Halal dishes exclude pork, alcohol and blood, and require that any meat be halal-slaughtered (dhabihah) — a specific method emphasizing a quick, humane cut and full draining of blood, done with intention (tasmiyah) recited beforehand. It's not a flavor restriction so much as a sourcing and preparation standard, which is why halal versions of a dish can taste identical to the non-halal original — the difference is entirely in how the meat was obtained.

Kosher

Kosher dietary law (kashrut) excludes pork and shellfish entirely, and — distinctively — prohibits mixing meat and dairy in the same dish or meal, down to using separate cookware for each. A kosher soup with meat, for instance, can never contain milk, cream or cheese, which changes how certain classically dairy-and-meat combinations get adapted.

Vegetarian

Vegetarian excludes meat, poultry and fish outright, while still allowing eggs and dairy — the most flexible of the four categories, and often the easiest to find naturally within a cuisine's existing repertoire rather than requiring substitution.

Carnivore

Carnivore flips the emphasis entirely: dishes built around beef, lamb, goat, chicken, fish and other animal proteins as the centerpiece, for anyone eating a meat-forward or low-carb way.
